Rich Miso Bean Dip
This is a great way to use leftover beans (Or, when cooking a dish with beans, make extra to use for this recipe), and a sustaining snack. Enjoy with rice crackers, carrot or celery sticks, or on fresh organic sourdough.
- 1 c Cooked Beans of choice
- 2 T tahini
- 2 tsp Miso*
- 2 t tamari
- 2 t Mirin
- 1⁄4 c Chopped Parsley or Corriander
- Water, to thin out if necessary
Blend all ingredients until smooth, adding water for thinning to your desired consistency. Taste for seasoning and adjust if necessary.
*Any beans maybe used, but I find adzuki beans or lentils work best.
*(lighter miso will impart a sweeter effect; darker miso will be more rich and salty)
